Simple Guacamole
Guacamole is so quick and easy to make. It really is the best gluten free and diary free dip you can make for yourself - well, in my opinion. Happy snacking!
Ingredients:
2 ripe avocados
2 Tbsp. diced green onion
1 Tbsp. minced cilantro
½ Roma tomato diced
2 tsp lime juice
⅛ tsp paprika
¼ tsp salt
Black pepper to taste
Instructions:
Take your avocadoes and cut them in half, removing the pits first and then the skin. Then place them in medium-sized bowl.
Add green onion, cilantro, lime juice, paprika, salt and pepper to the bowl with the avocados.
Lightly mash all ingredients together with a fork. Try not to over mix as a chunky guacamole maintains a better consistency for dipping.
Gently fold in your diced Roma tomato (this can be omitted if desired) and enjoy!
Notes:
Guacamole is best eaten fresh so prepare this right before you want to eat it. It can turn a yucky color if left in the fridge overnight though it still tastes great.
When I remove the pits and skins from my avocado’s, I like to slice it half starting from the top where the stem was and cut down to the pit and then cut around the pit to get two even halves of avocado. Then, using my knife I chop down into the pit in one go so my knife sticks, slightly twist my knife to the side and your pit will pop right out on your knife. I peel the skins off last just pulling it off with clean hands.
You could use smoked paprika here instead of regular paprika for a really yummy taste.
If you wanted to get even more decadent with this guacamole you could add some bacon - its so good if you have time to cook bacon and crumble into this mixture.
