Baked Turkey Meatballs

These are really healthy, light and tasty meatballs.  They are great on their own or in a simple marinara sauce.  My boys love eating these and kids in general just love meatballs.  And hey, if you make them yourself, you know exactly what’s in them.

Ingredients:

1.5 to 2 lbs. Ground Turkey

¾ cup diced Green onion

½ cup crushed Rice Chex cereal

1 Egg

1 tsp Salt

1 tsp Dry Basil

1 tsp Paprika

Instructions:

  1.  Preheat oven to 375 F.

  2. In a large bowl combine ground turkey, diced green onion (green part), salt, dash of black pepper, basil, paprika and egg.  Loosely combine it using your hands - it mixes it the very best.

  3. Crush Rice Chex in a zip bag and add to ground turkey mixture.  Loosely combine using your hands again

  4. Cover a large cookie sheet in tin foil or parchment paper.

  5. Using your hands make small balls with the turkey meat mixture.  About 2-3 Tbsp size

  6. Place balls on the cookie sheet in rows

  7. Bake in the oven 20-25 minutes or until firm when you press down with your finger.

  8. Please note that meatball color will vary depending on the leanness of the ground turkey you buy.  The ground turkey used in our photos was very lean, therefore they are very light in color.

Notes:

  • Meatballs are ready to eat as soon as they are removed from the oven.  They can also be added to any sauce you might make - see other recipes to utilize some of my sauce recipes.
