Baked Beef/Turkey Meatballs

If you like the flavor of beef but find it a little too heavy for you, these meatballs are for you!  You will have a little extra fat in these meatballs that you miss in turkey meatballs so you will need more dry crumbs in your mixture.  I especially like using this recipe when I make spaghetti and meatballs!  One thing I really love about meatballs is they are very easy to make for the novice chef out there.  This recipe is very forgiving if you don’t have exact ingredient amounts - just make sure to follow the baking instructions.


Ingredients:

1 ½ lbs. Ground Turkey

1 lb. Ground Beef

¾ cup diced Green onion

3/4 cup crushed Rice Chex cereal

1 Egg

1 ½  tsp Salt

1 ½ tsp dry Basil

1 tsp Paprika

Black Pepper to taste

Instructions:

  1. Preheat oven to 375 F.

  2. In a large bowl combine ground turkey, ground beef, diced green onion (green part), salt, dash of black pepper, basil, paprika and egg.  Loosely combine it using your hands - it mixes it the very best.

  3. Crush Rice Chex in a resealable bag and add to the meat mixture.  Loosely combine using your hands again.

  4. Cover a large cookie sheet in tin foil or parchment paper.

  5. Using your hands make small balls with the meat mixture.  About 2-3 Tbsp. size.

  6. Place balls on the cookie sheet in rows.  They can be placed quite close together, just make sure they are not touching to ensure an even bake.

  7. Bake in the oven for 20-25 minutes or until firm when you press down with your finger. Meatballs will turn a nice golden brown color when finished baking as well.

 

Notes:

  • This recipe makes about 50 meatballs and gives you that great beef flavor without all the fat.
