Sweet and Sour Pineapple Meatballs

This is a really great recipe on a cold day or if you need to take a meal to a family with food allergies.  Make this recipe along with my turkey meatballs or turkey/beef meatball recipe.  This is a kid favorite and best served over rice.  This is a modified recipe from my Mother-in-law and she knows how to feed kids! 


Ingredients:

1 diced red pepper

1 Cup shredded carrot (I use carrot matchsticks here)

1 Cup brown sugar

⅓ Cup white vinegar

1 - 20oz can of pineapple tidbits

4 Tbsps. Gluten Free Soy Sauce (I use Kikkoman’s Gluten Free Soy Sauce)

3 Tbsps. cornstarch

⅓ Cup water

¼ Cup diced green onion

2 Cups uncooked rice

*Make one recipe of Baked Beef/Turkey Meatballs or Baked Turkey Meatballs


Instructions:

  1.  Prepare the turkey or turkey/beef baked meatball recipe and get it baking in the oven

  2. Cook 2 cups of rice.  I would highly recommend a rice cooker here.  It is hands off and cooks your rice perfectly.  All you need is to add your uncooked rice and water!   3. In a large pot add 2 tsp of oil.  Heat oil over medium-high heat.

  4. Add diced red pepper and shredded carrot to the pot to sauté the vegetables.  Once slightly softened add brown sugar and vinegar over medium high heat.

  5. Add the entire can of pineapple tidbits, juice and all.

  6. Bring the mixture to a simmer and add the soy sauce.

  7. Combine water and cornstarch together in a separate cup and mix well.

  8. Once the brown sugar crystals are gone from your simmering mixture, add the cornstarch/water mixture to your pot while constantly stirring.

  9. Your sauce will immediately thicken.  Remove from heat and add green onion.

  10. Add your finished baked meatballs to the sauce.

  11. Serve your meatball sauce over cooked rice in bowls.



Notes:

  • I love using a rice cooker and if you are new to Gluten free eating, I would highly recommend one.  Lots of pressure cookers on the market can also cook rice really well. 

  • This is a large recipe and can easily feed 6-8 people.  So, if you have fewer people in your home than this, you will have leftovers - yay, that means fewer nights of cooking or lunches for work!

  • This dish freezes really well with cooked rice and is easily reheated in the oven or microwave (with the correct dishware to do so).
